Carolina Style Ribs with Sweet Corn and Roasted Potatoes


Alrighty, lets get down to the real meat and potatoes (Ha!) of this blog. Simple and delicious recipes. Today I'll be sharing a recipe that is PERFECT for the summer barbecuing months as long as you don't mind a little heat. I personally made this recipe on a Traeger pellet smoker, but this can also easily be done in a home oven it just requires a bit more work and monitoring.

Lets get started with our ingredients list.

Dry Rub (can be scaled up infinitely and keeps VERY well)

4 tsp  Paprika (preferably smoked, but regular will work in a pinch)

1 Tbsp Light brown sugar

1 Tbsp Kosher salt

1 tsp white pepper

1 tsp black pepper

1 tsp mustard powder

1 tsp garlic powder

1 tsp cayenne pepper

Simply combine all of these in a bowl or resealable bag and stir or shake to combine

Roasted Potatoes

4 lb Yukon Gold potatoes (cut into eighths)

1 tsp Baking Soda 

5 Tbsp Olive oil (EVOO or otherwise)

3 Medium sized cloves of garlic, minced 

Kosher Salt and Black Pepper to Taste

Ribs

 1-2 Medium Sized Racks of Pork spare ribs (membrane removed)




1. Preheat oven to 450 degrees and adjust your oven rack to  the middle position if possible, and heat roughly two quarts of water or enough to cover your cut potatoes to a boil. Once boiling add in 3 tablespoons of kosher salt and 1 tsp of baking soda. Add in your potatoes and bring back to a simmer.
If using a smoker like I did this would also be the perfect time to start pre-heating.

2. Pat dry your pork spare ribs and begin coating with the dry rub mixture. Be sure to cover completely and evenly and allow to rest.

3. If using smoker it should be preheated by now. Place the ribs in the smoker and keep an eye on the temperature (you'll want it between 180-200)

3a. If using a home oven you'll want to wrap the ribs in aluminum foil and place them on the upper rack of the oven about this time.

4. Check the potatoes for tenderness, a knife should easily slide into them and remove cleanly. Remove from the boil and drain completely. Place the potatoes into a large mixing bowl and combine with the garlic, salt and pepper, and olive oil and give them a rough toss to combine (you'll want to be rough with them to give the exterior a kraggy appearance).

5. Spread the potatoes evenly on a baking sheet and place in the oven. Cook until the top has formed a crispy layer, but the underside remains soft (roughly 30-45 mins. depending on oven)

6. Once cooked through remove from oven and if oven cooking ribs reduce temperature to 325

6a. Maintain temperature on the ribs until an internal temperature of 160 has been reached. After this remove them from the heat and wrap in aluminum foil to rest until service. 

7. During this time cook the sweet corn to your liking (grilled, smoked, boiled, roasted) until cooked through and ready to serve.

8.  Plate up and enjoy!
